Tofu doesn’t have to be difficult! Many recipes require marinating and/or weighting & pressing the tofu before cooking, but these steps aren’t absolutely necessary. This Baked Maple Dijon Tofu recipe below makes a great addition to a festive spread, a tasty sandwich stuffing, a satisfying salad topper, etc. The cause can be used for other proteins as well,which means everyone at the table can enjoy the same flavors.
In addition to protein, tofu contains good levels of calcium, iron & phosphorus. If you are concerned about genetically modified soy products, choose one that is labeled “organic” as these are not genetically modified. Some non-organic brands will still list the ingredients as containing “non-GMO soybeans”

- 1 block Tofu firm
- 2 tsp Dijon mustard (more or less depending on the brand)
- 2 tbsp Maple Syrup
- 2 tbsp Soy Sauce (preferably a less sodium, naturally brewed variety)
- 1 tsp neutral oil
- 1 clove chopped garlic (and/or 1/2 cup chopped onion)

- Rinse the tofu in cool water, pat dry.
- Cut into slices, approximately 1/2 inch thick and arrange in a casserole dish, allowing space between the pieces.
- Add garlic and onion, if using.
- Combine the last four ingredients and pour over the tofu.
- Cover and bake at 375 degrees for 20-25 minutes.
- Flip the tofu and bake for another 10-15 minutes uncovered. (Keep a close eye on it during the last 10-15 minutes- the tofu will absorb the liquid and the bottom can burn quickly. Add a splash of water, if necessary- it won't hurt at all!)
